Mini Banana + Spinach Muffins

Ingredients 

  • 1 pack Spinach/Banana MotherLove Kitchen mix 
  • 3 eggs 
  • ½ cup water or milk (use dairy or your favorite non-dairy) 
  • ⅓ cup oil (avocado or olive oil are my go-tos, but any neutral vegetable oil works) 

Instructions 

  1. Preheat your oven to 350°F and set out one or two mini muffin pans. 
  2. Prep the pans: Lightly coat each muffin cup with avocado or olive oil spray or line with mini muffin liners. 
  3. Mix the batter: In a medium bowl, follow the mixing directions on your MotherLove Kitchen package,just combine the mix with the eggs, water or milk, and oil until smooth. 
  4. Fill the cups: Pour the batter into each mini muffin cup, filling about ¾ full. (One pack will make roughly 36 mini muffins.) 
  5. Bake according to the MLK package instructions, until the tops are set and lightly golden. 
  6. Cool completely before removing the muffins from the tray, this keeps them tender and intact. 

Tips 

  • These freeze beautifully—store in an airtight bag and thaw for quick, on-the-go snacks.
